5 Minute No-Bake Energy Bites

More, please.

My kids always are asking me to make more of these no-bake energy bites, which is why my fridge is usually stocked with these little gems!

I started scouring the internet when my twins were little for an easy grab-and-go midday snack that I could toss in my purse or diaper bag. I needed an easy way to fill my body with good calories while I was chasing my boys around.

Over the years, I adapted recipe after recipe to finally come up with what is now our family favorite. One of my boys loves this recipe so much that when I get out the food processor he comes running.

Here is our favorite no-bake energy bites recipe. It is super easy to adapt to your liking (ahem, when your kids start requesting more chocolate or coconut).

No-Bake Energy Bites (Healthy and Delicious)

  • 3/4 cups of pitted and dry dates
  • 2 1/2 cups of gluten-free oats

  • 1/4 cup dairy-free chocolate chips
  • 1/4 cup almond butter
  • 1/2 cup water
  • dash of cinnamon
  • 1/4 cup unsweetened coconut flakes

Toss the dates, oats, maple syrup, almond butter, cinnamon, and coconut flakes into the food processor. Pulse, about 30 seconds, or until the mix is the texture of coarsely ground coffee.

Add in water and pulse for another 20 seconds. The texture will become gooier. Note: If it becomes too gooey, you can add in more oats to offset the water.

Finally, add in chocolate chips and pulse the mixture 5 times. This will mix the chocolate chips into the batter, but will still keep them noticeable!

Make tablespoon-sized balls by rolling them in your hand. Place on a cookie sheet. Set your no-bake energy bites in the refrigerator for about 30 minutes and enjoy!

You can pre-make to-go snacks in recyclable bags. I typically prep these on Sunday before our week gets into full gear Monday morning! This no-bake energy bites recipe lasts about 4 days before we run out in our house.
