I never understood the challenge and stress that comes with busy school days, until I had to do it myself. Getting out of the door and to school on time is brutal. In all honesty, it feels like I put in a full day’s work by 8:30 a.m. The struggle is real folks! Our favorite recipe that has been a lifesaver on busy school days is the Strawberry Papaya Tofu Smoothie. Now, wait…I know what you’re thinking! Tofu in a smoothie?
I’m not crazy. Adding House Foods Soft Tofu to a smoothie is a great way to pack it with protein (without really changing the flavor or texture) and a great way to feed your family a plant-based treat!
So are you ready to blow your children away with a protein-packed treat on your busy school days?
House Foods Strawberry Papaya Tofu Smoothie:
- 1/2 package of House Foods Tofu Soft
- 3/4 cup papaya; peeled, seeded, and chopped
- 1 cup fresh strawberries
- 1 cup frozen mango
- 1/2 banana
Instructions: In a blender, combine all ingredients. Cover and blend until smooth, about 30 seconds or so. Enjoy!
