Easy Crockpot Chicken Tacos for Busy Weeknights

These Easy Crockpot Chicken Tacos were inspired by a camping trip my family took to Moab. I needed to make something ahead of time that would feed the masses while having delicious leftovers for our trip.

The good news is, these tacos can be made with little to no experience in the kitchen!  With soccer, lacrosse, and swimming all after school during the week, I need recipes that can be ready when we get home.  The prep time for these tacos takes less than 5 minutes or less, which is manageable during our busy morning rush!  I love when I can easily toss all the ingredients in a crock-pot and have a meal ready by 5 p.m.!

Once you’re home, shred your chicken and spice it up with your favorite taco toppings.  Add a little salsa, fresh cilantro, sour cream or cotija cheese….and you’re in business!

A little fresh avocado is also a nice touch!

The chicken and Rotelle create the perfect amount of cooking liquid in the crockpot, so don’t worry about things drying out while it cooks.  You can simply set the timer and go on about your busy day.

Easy Crockpot Chicken Tacos for the Whole Family

On the go with a busy family? Need a healthy dinner that will be ready when you get home? These Easy Crockpot Chicken Tacos are something the whole family can enjoy. Did we mention how delicious the leftovers will be?

  • 1.5 pounds Chicken breast
  • 1 packet Taco seasoning
  • 1 packet Dry ranch seasoning
  • 1 can Rotelle tomatoes

Toppings

  • 2 Limes
  • Sour Cream
  • 1 jar Salsa or pico de gallo
  • Cotija cheese
  • Corn or flour tortillas
  1. Place chicken, taco seasoning, dry ranch seasoning & can of Rotelle into the crockpot.

  2. Cover the crockpot and set timer on low for about 6 hours.

  3. Assemble your tacos with your favorite toppings.

  4. Enjoy!
