Frozen Yogurt Bark: A Healthy After School Snack that Gives Back

I knew having boys in the house would require me to have a fully stocked fridge at all times, I just thought I had a few more years before I needed to get creative with healthy snack ideas to keep them fed and full.  My two five year olds started full-day preschool this year (sniff, sniff) and I have been shocked at how much food they consume when they come home after school.

They basically eat a full meal as soon as they get home, which means that I had to find snack ideas that I could easily make and keep stocked in our fridge or freezer.  It is important to me that they have healthy options to grab when they are ravished after school.

This Frozen Yogurt Bark recipe, paired with a serving of Honey Nut Cheerios™ is a protein packed and fiber rich snack that has been a life savor for my boys in the afternoons.

Well, at least it tides them over until dinner!

While at the store stocking up on our favorite General Mills products (Honey Nut Cheerios™, Mott’s Medleys® Fruit Snacks, Annie’s™ Cheddar Bunnies, Pillsbury™ Toaster Strudel™), I decided to throw in a Yoplait® Original Fridge Pack to make some frozen yogurt bark as a fun after school snack for my boys.

Frozen Yogurt Bark: A Healthy After School Snack:

Ingredients:

  • Yoplait® Original Fridge Pack (we like the Strawberry/Peach Combo)
  • Plain greek yogurt
  • Diced fresh fruit of your choice
  • Unsweetened coconut flakes
  • Any additional toppings your family might enjoy (chocolate chips, pistachios, chia seeds, dried fruit,etc.)
  • Parchment paper

Instructions:

Begin by lining a cookie sheet with parchment paper.

In a bowl, combine 1 1/2 cups of Yoplait flavored yogurt and 1 1/2 cups plain greek yogurt.  The greek yogurt helps to create a thicker mixture, making the process of spreading it onto a pan much easier.  It also adds extra protein, which is a bonus in my book!

Now, spread the yogurt mixture on the lined cookie sheet.  Next, sprinkle the diced fruit evenly on the yogurt mixture and gently press it down with your hand.  Finally, add any additional toppings  you may like and place the cookie sheet in the freezer for 4 hours.

After 4 hours, remove the cookie sheet from the freezer and peel the parchment paper from the frozen yogurt sheet.  Break the yogurt into pieces and enjoy!  Frozen yogurt bark can be stored in your freezer for up to 2 months.

You can pair the yogurt bark with a serving of Honey Nut Cheerios for a perfect after school snack that your kids will LOVE.
