As parents, we are always researching ways to provide the best for our children. We do our homework about the best schools, finding the best safety gear and keeping our kids safe online, so it only makes sense that we are always striving to feed our families with a Modern Mindset. To me, that means creating meals that focus on clean eating. 

As an Italian family, pasta is on our menu every week. But in an effort to shift our mindset and find a new, healthier way to eat foods that we love, my family has explored different ways to make our favorite pasta dishes. Modern Table® Gluten-free, Complete Plant-Protein Pasta has become a household favorite because it allows my family to enjoy traditional Italian dishes with simple ingredients. Since we moved this past winter, I have been itching to plant a backyard garden and cook with the fresh vegetables that we have grown. We have six tomato plants producing plenty of garden loot, allowing us to cook this Vegan Tomato Cream Pasta recipe! This is great because we are trying out Meatless Monday night dinners. Vegan Tomato Cream Pasta

Ingredients:

  • 1-2 lbs Campari tomatoes
  • 1 box Modern Table®​ Penne​
  • 2-3 cloves of garlic
  • 1 tbsp. olive oil
  • Salt and pepper to taste
  • Dried basil (optional)
  • 1/2 cup oat milk
  • 1 large shallot finely diced
  • Parmesan cheese (vegan)

This 30-minute recipe appeals to everyone…even the person that is on the fence about a vegan meal. It allows for a lot of variation, and you can really switch up the ingredients and tailor it to your liking. 

Begin by blanching 2-3 lbs. of Campari tomatoes (or any ripe tomatoes you may have from your garden) until the skin easily falls off. Peel the skin off of the tomatoes. Sauté the diced shallots, olive oil, and garlic until fragrant. Add the tomatoes, cooking until they break down. Next, season with salt and pepper. Use an immersion blender to puree the tomato mixture. Once the sauce is smooth to your liking, add oat milk for creaminess and toss together with your cooked Modern Table®​ protein pasta.
